楯野川 Shield【山形】~吟醸王国の日本酒エントリーモデル~
今宵のお供はお米の産地であり銘酒が数多く存在する山形県の「楯野川」です。
酒田市で1832年(天保3年)から創業を開始した楯の川酒造。
驚きなのですが「酒」と名のつく市は全国で酒田市だけとのこと。
上杉藩の家臣が荘内を訪れた際に水のおいしさに驚き、
酒造りを薦めたところから酒造りが始まり、荘内藩藩主酒井公が楯の川酒造のお酒を
飲んで大いに喜ばれ、楯野川と命名した所が始まりのようです。
そんな楯野川酒造ですが、2010年より全て純米大吟醸の製造にシフトしています。
その理由は大きく2つ。1つはわかりやすさで、2つめは品質重視。
日本酒のカテゴリーが複雑でわかりにくい為、シンプルにしたかったという想いと、
より品質の向上を目指すという想いからでした。
今回飲むShieldは荘内発祥の幻の酒米「亀の尾」を使用したお酒で、
瓶に描かれた源氏車は楯の川酒造の家紋を意味し、盾はその伝統を守り続けるという意思を表現しているそうです。
香りは爽やかで味わいは芳醇でありながらも甘過ぎずキレがあり、
食中酒として万能なのではないかと思わせる美味しさです。
久しぶりの楯野川でしたが、色々な酒米を使用してシリーズ展開しているので、
酒米別や精米歩合別、はたまた生や火入れなど飲み比べするのも一興かもしれませんね。
Tatenokawa ~Japanese sake review~
Tonight's companion is "Tenokawa" in Yamagata prefecture, where rice is produced and there are many famous sake.
Shield of the brewery started in 1832 (tempo 3rd year) in Sakata City.
Surprisingly, Sakata is the only city in Japan that is known as "liquor."
When the vassals of the Uesugi clan visited the villa, they were surprised by the deliciousness of the water.
The sake brewing started when I recommended sake brewing, and the lord of the Shonai domain drank the sake of Tate no Kawa brewing and was very pleased.
That's Tatenokawa Sake, but since 2010, we have shifted to the production of Junmai Daiginjo.
There are two main reasons. One is easy to understand, and the second is quality.
I wanted to keep it simple because the categories of sake are complicated and difficult to understand.
By focusing on the highest category, Junmai Daiginjo, we aimed to further improve quality.
The Shield to drink this time is sake that uses the phantom sake rice "Kameno tail"
that originated from the villa,
the Genji car drawn on the bottle means the family crest of the Tategawa Sake Brewery,
and the shield intends to continue its tradition. Is said to be expressed.
The scent is refreshing and the taste is rich, but it is not too sweet and crisp,
which makes it a versatile liquor.
Since Tatekawa Brewery uses various kinds of sake rice to develop a series,
it might be fun to compare drinking sake rice, rice polishing ratio, raw and fired drinks.
