まつもと 守破離 五百万石【京都】~古都で息吹く伝統と革新~

今宵のお供は日本三大酒どころである京都伏見で醸された

澤屋まつもと 守破離 五百万石です。

伏見は京都を流れる3河川である「桂川」「鴨川」「宇治川」の流れる地であり、

安土桃山時代には豊臣秀吉伏見城を築城した場所として有名です。

 

日本酒をつくるには質の高い水が必要となりますが、

伏見は伏流水が桃山丘陵を通り、山麓地下から湧き上がった天然の名水に恵まれた地であることが銘酒の産地となった大きな要因ではないかと言われています。

 

さて今回の「守破離」、

よく物事を学ぶ姿勢としてスポーツや会社の研修等で聞く機会もありますが、

伝統を守り、その上で新たな学びを実践して伝統を破り、

守と破を大切にした上でそこから離れ、自己の新境地を創り出すこと。

 

まつもとの杜氏である松本日出彦氏は、

高校時代、ラグビーで全国制覇もしており、その後プロDJを目指した程の人物なのですが、

その後醸造を学んだ後に、名古屋で「醸し人九平治」を醸す萬乗醸造で修行し、

その上で実家である蔵に戻り、自身でしか創れない新境地を開拓します。

そんな境地を体現したのが「守破離」シリーズなのではないでしょうか。

 

フレッシュですが香りは控えめで、旨味と心地よい酸がはじけるのど越し。

単体で飲むというより食事に合うバランスの良いお酒です。

酒蔵見学や美味しい食事も楽しんでみてはいかがでしょうか。

SAWAYA MATSUMOTO SHUHARI ~Japanese sake review~


Tonight's companion is "Sawaya Matsumoto Morihaboku 50 Million Stone," which was brewed in Fushimi, Kyoto, one of Japan's three major liquor centers.


Fushimi is the place where the three rivers that flow through Kyoto, the "Katsura River," "Kamogawa," and "Uji River" flow, and during the Azuchi-Momoyama period Hideyoshi Toyotomi built the Fushimi Castle.


High quality water is required to make sake, but Fushimi's main reason is that the underground water is blessed with natural water that flows from the basement of the foothills through the Momoyama Hills.

 

By the way, as an attitude to learn things well in this "defence and separation", there is also an opportunity to hear in sports and company training.

To protect the tradition, practice new learning on it, break the tradition, value the protection and the break, and then leave it to create a new frontier.


Mr. Matsumoto also won the nationwide rugby title in high school, and he was a person who later aimed to become a professional DJ.

Then, after learning about brewing, I will practice in Manjo brewing, which brews the "Kurojijin Heiji" in Nagoya, and return to my parents' house, Kura, to develop a new frontier that only I can create.

It's fresh, but its fragrance is modest, and it has a delicious taste and a pleasant acid popping over the throat.
